Azienda Agricola Il Colle di Rossi Fioretta

My husband and I had such an amazing experience with Fioretta and Carlo, and it was truly one of the highlights of our trip to Tuscany. They welcomed us so warmly into their home, and the evening felt both authentic and unforgettable. Learning to make pici from scratch was such a fun hands-on experience, and the olive oil tasting in the garden made it even more special. The food, the atmosphere, and their kindness all came together to create a perfect memory. We left feeling inspired to try making pasta at home, and we’d love to return on our next visit to the region!

This was the highlight of our vacation in Tuscany! While we had many memorable experiences in this beautiful region, spending time with Fioretta and Carlo made our trip special. You won’t find friendlier, warmer, or more hospitable people. Fioretta taught us how to make Pici, Gnocchi, and Tiramisu, all of which was prepared in authentic Tuscan style. Carlo took us into the olive groves for an olive oil tasting, oil made by them. A wonderful full course dinner followed, and there was plenty of wine to go around, and a few extra surprises. Their friend Valentina came to help translate, and she was a pleasure to have met. We felt like they were all family. Thank you Fioretta, Carlo, and Valentina!

This was the most amazing experience we have had. A private cooking class where we made 2 types of pasta. After arrival we had drinks to start the day off, then we started the cooking class. It was so informative and hands on. Then after the class we walked the olive groves and gardens to see first hand how this amazing place works. Then Apretivo amongst the Grove. So fantastic. Then dinner served 4 courses...our pasta with 2 sauces, then a meat dish and dessert. Finished with limoncello. This is the best experience for Tuscan cuisine. Fioretta and Carlo were terrific hosts and we had a wonderful dinner with them as well. I highly recommend this place. A definite must do!!!
